Well, summer vacation is in full swing and so far it's been great. Like I told you last week, I was a volunteer at Jump Start camp and since I promised to tell you about it, here it goes!
Jump Start was totally awesome. I was a counselor for a super group of kids, and my co-counselor, Melissa, was awesome! We did all kinds of fun outdoor activities with the kids and cooked our own lunch as well. We made these really yummy and healthy chicken fajitas, guacamole, and salsa (I'll try and get the recipes to share). I would definitely recommend Jump Start to any 8-12 year old you know. It's a terrific one-day camp and not only do the kids learn a lot about nutrition, they have a great time. Oh, and the Zumba was intense, but enjoyable. (My hips were sore for like 3 days though- I think I was a little too into it).
Also, if you're looking for a really great time for someone who is not an 8-12 year old, Sarah Bush is also offering a teen cooking class! I'll be attending as soon as I'm back from church camp and family visits, but I'm really excited about it! We'll be learning how to make 10 healthy, but gourmet meals.
There's also the summer Fresh Start program going on for any high school student or teacher that wants to continue focusing on his or her health this summer! I'll be attending as often as I can & I encourage everyone to try it! It will be held at Mattoon High School.
So, although I'm pretty busy right now (I'm writing this from Kentucky at my grandparents house) I'm making time for healthy living and enjoying my summer.
